Easy Peasy Fritatta

A really nice and simple recipe, full of vegetables and flavour. This will serve about 6 or 7 people. You will need –

A nice hot oven
2 cloves of garlic
1 small onion
1 small butternut squash
1 courgette
Half a bag of spinach
4 eggs
Half a block of feta
Plenty of seasoning

Into an oven dish goes the butternut squash diced into generous cubes, with the garlic and some seasoning. Roast this up in an oven on about 180c for round 40 minutes.
Whilst you are roasting the squash, gently fry the onion in a pan and once softened and browned, add in the courgette slices. These do not need to cook, they only need to begin warming so take the pan off the heat and leave to one side until the squash looks browned and is a little squidgy.
In the oven dish, mix together the courgette and onions. On top of this goes the spinach and on top of that, is the feta. It’s like a little party.
Use a fork to whisk together the 4 eggs and season with plenty of salt and pepper before poring over the feta and vegetables mix.
It will need to cook for around 30 minutes. The best way to check if it’s ready is to find an eggy part and see if it is still runny. You want the egg to be solid but at the same time don’t leave it so long that it feels like you’re eating a trainer.
Cut into large squares and enjoy with some french fries or just double up portions!!
