Coming up Roses: Rose Cakes Part 2

Red Rose
This weekend was lovely Roses’ (of marathon cake fame http://wp.me/p31f5c-4H) 25th birthday. For the second year running I made a Halloween themed cake, which I will reluctantly post later, and some red, green and pink buttercream frosted fairy cakes.

I used –
100g of self raising flour
100g of slightly salted butter
100g of golden caster sugar
2 eggs
and followed the easy peasy 5 stage fairy cake recipe
1. Cream together the butter and sugar until light and fluffy
2. Beat in the eggs in about three stages to prevent curdling
3. Fold in the flour
4. Spoon the mixture into 12 fairy cake cases
5. Bake in an oven at about 180c for 10 to 12 minutes or until lovely and golden on top

To make enough buttercream for 12 cakes I used an electric hand whisk to cream together –
150g of softened, unsalted butter
300g of confectioners’ icing sugar
A splash of boiling water
A dribble of vanilla extract
And then various spoonfuls of colouring to get the icing how I wanted it and ready to start piping.

Rose was very pleased with them – ain’t she boooootiful?
